Energy is such a valuable commodity that food can provide and for that, I do recommend this gorgeous dish. It’s packed with so many goodies, healthy fats and protein, that it is the perfect treat for a high activity lifestyle. I used to eat it all the time when I was training for races (I’m on a running hiatus right now…). Give it a try and let me know what you think!

If you wanted to, you could use maple syrup instead of dates to make it sweeter. That’s an excellent option that I opted out of simply because I didn’t want it too sweet ..

Coconut Vanilla Chia Pudding

Ingredients

  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 2-4 medjool dates, soaked and pitted
  • 1 teaspoon vanilla

Instructions

  • Combine everything in a high speed blender and blend until completely smooth.
  • Pour into a cup/bowl and let sit for a few minutes (the chia seeds swell and absorb the liquid)
  • Add fresh fruit, fancy toppings, or even coconut cream. Delicious.

  5. Wondering if you loved Chia pudding the first time you had it, or if it was an acquired taste for you? I've tried a couple of recipes, including this one which looks so divine ( I shared it with a bunch of people looking for one), but there's something about the consistency that I've not been able to find a love of myself. I know there's a huge community of people who love chia and my guess is they would love this recipe, too. I'm still hoping I'll develop an affinity for it as it's so healthy and I really like the idea of it, especially as it's SO customizable. Any tips? And BTW – love your photography!

  6. You know, I loved chia seeds almost immediately, and I think because the first time I made them it was with a friend that already knew his way around the little guys. I've made them with water and little sweetener before and did NOT enjoy it so I can imagine that others may not like chia seeds at first. I really believe the two tricks are in the liquid you use and then blending it. The blending is key, for me at least. I like it with fresh nut mylk, as well, and blended with soaked dates. Cinnamon is also a great addition. And thanks so much for sharing 🙂 and thanks so much for your compliments, you are just the sweetest!!
