This Easy Creamy Cheesy Rotini’s name says it all. It really is an easy recipe that gives you a delicious, rich and creamy side dish that goes really well with a variety of main dishes and side dishes.
I am guessing you might already realize that I make quite a few new recipes. Even when we love a recipe, it some times takes a while for me to be able to make it again. So, it has been a bit since my family has been able to enjoy this recipe. My picky eater has developed a thing about pasta that is not macaroni or spaghetti. I showed this recipe to my picky eater, and she agreed to try one piece of rotini. After that first bite, she said she wanted a bowl. After finishing that bowl, she said, “Mom, you need to make this recipe more often, like a LOT! It is really good!” I hope you and any of your loved ones you serve this to have the same reaction.
What You Will Need for Easy Creamy Cheesy Rotini
Ingredients Needed
- 1.5 cups half-and-half
- 10.75 oz can Cheddar cheese soup
- 1/2 cup butter, sliced
- 16 oz pkg Velveeta (or half of a 32 oz pkg), cubed
- 16 oz box rotini pasta, cooked and drained
- Optional Topping: Italian bread crumbs

- Large pot and strainer (I really like my clip on strainer and use it all the time.)
- Measuring cup
- Can opener
- Butter knife
- Cutting board
- Stirring spatula
Time Needed
- Prep Time: 20 minutes (This includes cooking your rotini.)
- Cooking Time: 5 minutes

Ingredients
- 1.5 cups half-and-half
- 10.75 oz can Cheddar cheese soup
- 1/2 cup butter melted
- 16 oz pkg Velveeta or half of a 32 oz pkg
- 16 oz box rotini pasta cooked
- Italian bread crumbs optional topping
Instructions
Cook your rotini in a large pot and drain. (Return to pot if you are not using a clip on strainer.)
Add your remaining ingredients, except optional topping of Italian bread crumbs, to the rotini and stir over medium heat until the sauce is smooth.
If desired, sprinkle bread crumbs on top of each serving.
